I discovered my passion for cooking at the age of 12 when I was placed at Alpha Boys School, an Orphanage operated by the Sisters of Mercy in Kingston, Jamaica.
I was asked by Sister Mary Goretti “So Raymond what do you want to be in life?” I went into deep thought as I began to seriously consider my future career, but I had no ready answer.
One day as I was walking, something struck me, it was a newspaper and in it there was an article about a very well-known Chef who spoke of his life experiences.
This had a profound effect on me and gave me inspiration, I immediately went to Sister Goretti and said, “I want to be a Chef”.
